Low Country Boil Foil Packs

A coastal-inspired Low Country Boil is a summer favorite for my family, thanks to my Daddy making it in a big cooker at our family beach house every time we visit! When my husband suggested that we try cooking it on the grill one night for the two of us, I came up with these delicious foil packs, perfect to throw on the grill, or oven, any night of the week!


  • 1 bag large frozen shrimp, peeled and deveined

  • 1 package andouille sausage

  • 1 package polka kielbasa sausage

  • 5-6 medium russet potatoes, cut into 1" pieces OR 12 red potatoes cut in half

  • 4 ears of corn, split into thirds

Marinade Ingredients

  • 1 TBSP garlic powder

  • 2 TBSP Old Bay

  • 1/2 TBSP Italian Seasoning

  • 1 tsp paprika

  • 1/2 tsp onion powder

  • 1 tsp salt

  • 1/2 tsp pepper

  • 2 TBSP olive oil


  1. Wash, dry and prep all of your ingredients for your packets. Prepare your grill or preheat the oven to 425.

  2. Pierce each 1" diced potato with a fork, put them into a microwave-safe bowl and microwave for 3 min. Let cool.

  3. While the potatoes are doing their thing, start preparing your marinade by blending all of your dry ingredients: garlic powder, old bay, italian seasoning, paprika, onion powder, salt and pepper.

  4. Put your shrimp and sausage into 2 separate large ziplocs. Pour 1 TBSP of olive oil in each and pour half of the dry marinade blend into each bag. Now shake what yo mama gave ya! If you have a couple hours, let these sit in the fridge and really soak up that bayou flavor. If not, no worries, you can move on to step 5.

  5. Lay out your sheets of aluminum foil. You want them about 16-18" long

  6. Divvy out all of your potatoes, then marinated shrimp and sausage. Close those aluminum foil packets up nice and tight because you'll be flipping them.

  7. Add your packets to the hot grill. Sprinkle your corn with a little salt and pepper and place them around the grill as well.

  8. You will grill or roast for a total of 20 min, flipping every 5 min to make sure everything is nice and warmed through. Be careful! You do not want any juices to escape!

  9. After 20 min, VERY CAREFULLY remove everything from the grill, open them babies up and enjoy!
